Bite-sized bits of bliss, is that enough of a description? I’m only kidding I’ll give you more than that, but in all honesty, there’s nothing more you need to know.

I’m hot a huge fan of fancy appetizers, give me a few varieties of different dips and I’m normally happy. Throw in a munchie or two and I’m good to go.

Spinach Artichoke Wonton Cups bring together the beloved flavors of spinach artichoke dip along with the crunch of a crisp wonton. They are ideal for holiday parties, entertaining or even a night when you are just having drinks and appetizers.

You do that right? I sure do! Once in a while, I just make “fun foods”, which consists of a couple different finger foods and we have drinks along with them.

The filling is super easy to make and can be made earlier in the day and refrigerated. Simply begin with frozen spinach that has been thawed, and thoroughly drained, get all the moisture out of it. Mix the spinach with a jar of marinated artichokes that have been chopped. Stir in softened cream cheese, shredded mozzarella, a bit of parmesan cheese and some seasonings.

If you haven’t used wonton wrappers before, don’t be intimidated. For this appetizer, I used a mini muffin pan. Place the wonton wrappers into the spaces using a small measuring spoon to gently push down. The sides of the wonton wrapper will need to be pushed in so that the “cup” portion forms.  They then get popped into the oven for 5 minutes to gently brown.

Use a small cookie scoop to place the prepared filling into the par-baked wonton cups. Then back into the oven for approximately 5 minutes to warm the filling through and melt the cheeses. I simply adore this easy appetizer and cannot wait for an excuse to make them again and again.
