Often times the easiest recipes are the ones we love the best, am I right? The ones that the kids request over and over, the ones that stand the test of time.

Now that doesn’t mean we refuse to try something new or a bit more complex from time to time, but overall we all have classic recipes that are tried and true family faves. 

S’mores Brownies are one of those basic recipes that are always a hit, requested frequently, and never fails. I bet you’ll feel the same way once you’ve made them in your kitchen.

Of course, there’s nothing that can compare with the beloved outdoor treat uniting sticky-fingered friends around campfires for decades, the amazing, the wonderful “S’MORES”. Classic in construction with a perfectly (or imperfectly) toasted marshmallow, a bit of a Hershey’s chocolate bar, all sandwiched between 2 graham crackers. Simple and delicious! 

No one is denying the classic S’more stands in a class by itself, but here in Michigan especially we don’t always have access to a campfire. In fact some years we have snow on the ground from November through April. That’s when an alternative that you can enjoy year-round such as S’mores Brownies is the perfect solution. 

What’s the history of S’mores?

It is more than just a delicious contraction meaning “some more”. In the 1920s S’mores made their appearance into a cookbook under the name “Graham Cracker Sandwich”, referencing popularity with both the Boy Scouts and Girl Scouts. 

What ingredients do you need to make S’mores Brownies?

  • Butter
  • Brown sugar
  • Eggs
  • Vanilla extract
  • Flour
  • Cocoa powder
  • Mini marshmallows
  • Sea salt
  • Graham crackers

Some tips for making S’mores Brownies:

  • Hershey’s Special Dark Cocoa was used in this recipe, regular cocoa powder will also work.
  • The flaky sea salt can be omitted.
  • Line the baking pan with parchment paper for easy removal and cleanup. 

Simple steps for making S’mores Brownies:

Preheat your oven to 350F. Spray an 8” square baking dish with nonstick cooking spray. Set aside. In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and sugar until combined— about 2 minutes on medium-high speed. Next, add the eggs and vanilla extract and beat until the color becomes a pale yellow— about 2 more minutes on medium-high speed.

Add in the flour and cocoa powder and mix at low speed just until no large lumps remain. Make sure not to over mix! Scrape down the sides of the bowl using a silicone spatula to ensure the batter is fully combined.

Transfer the batter to the prepared baking dish.

Top with mini marshmallows and flakey sea salt.

 

Bake in a pre-heated oven for 25-30 minutes, or until the center no longer jiggles when gently shaken. (Important: These are very fudgy brownies. A toothpick inserted into the center will not come out clean).

While the brownies are still warm, and the marshmallows are still gooey, sprinkle over the crushed graham crackers.

Allow the brownies to cool at least 30 minutes prior to slicing.

Ingredients

Brownie Batter:

  • 1 stick of butter, melted
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup flour
  • 1/2 cup cocoa powder

Brownie Topper:

  • 1 cup mini marshmallows
  • 1/2 teaspoon flaky sea salt
  • 1/2 cup graham crackers, crushed

Instructions
