A few months back, I made homemade vanilla simple syrup for the first time and it blew my mind. I had no idea how easy making simple syrups at home was and it has allowed me to make more and more creative drinks from the comfort of my home such as my lavender honey latte made with lavender simple syrup, my cinnamon dolce white hot chocolate made with cinnamon dolce simple syrup, or even my cotton candy frappuccino made with raspberry simple syrup. I thought it was finally time to tackle the original simple syrup and it turned out perfect!
Now simple syrup is made with just two ingredients. Yes, you heard that right. Just two ingredients. You basically bring water and sugar to a boil until the sugar dissolves and then you let it cool. That’s it.
So the question you may have now is why make simple syrup instead of using granulated sugar and there’s an easy answer. Simple syrup just mixes better into drinks so that you don’t end up with a bunch of granules of sugar at the bottom of you drink. This simple syrup recipe is what you use when you want to add a bit of sweetness to a drink but you don’t want to add any additional flavors.
I personally like using a little bit of simple syrup in my morning coffee just to add a bit of sweetness but there are so many different options for uses in cocktails, coffee, desserts, etc. Yes, you can use simple syrup in desserts to! Drizzling a bit on top of a cake helps moisten it or if it’s a flavored simple syrup, it can even give it a little extra flavor.
The only real variation between simple syrup recipes is the water to sugar ratio. Personally, I use 1 cup sugar and 1/2 cup water because I like it thicker and more syrup-y but if you want it thinner, use 1 cup sugar and 1 cup water instead.

Ingredients
- 1 cup granulated sugar
- 1/2 cup water
Instructions
- In a small saucepan over medium heat, combine all ingredients. Bring to a soft boil and cook until the sugar has dissolved, stirring the entire time.
