After seeing the seasonal drink at Starbucks was a pistachio latte, I was so curious to try making that drink at home! Now like most of my other Starbucks copycat drink recipes, I knew the recipe would probably be espresso, milk, and a simple syrup with the flavor of that simple syrup being pistachio this time. The problem I faced was how to turn nuts into a simple syrup rather than using an extract or anything artificial. It was tough to get right but I am happy with the results as I think the simple syrup adds just enough pistachio flavoring to drinks.
Now how I ended up making it work was I made the simple syrup with the pistachios straight in it before blending everything together in a food processor and then running it through a cheesecloth or fine mesh strainer. The final step is an important part of removing any particles and chunks from the simple syrup of pistachios. As you can see from the pictures, there was still a little left in my batch as I just used the fine mesh strainer but they are small enough that it will make no noticeable difference in a drink.
Now if you do happen to have pistachio extract on hand from a baking project, feel free to use 1 teaspoon of extract in the recipe instead of the pistachios.
The only real variation between simple syrup recipes is the water to sugar ratio. Personally, I use 1 cup sugar and 1/2 cup water because I like it thicker and more syrup-y but if you want it thinner, use 1 cup sugar and 1 cup water instead.

- In a small saucepan over medium heat, combine all ingredients. Bring to a soft boil and cook for about 10 minutes, regularly stirring. The sugar should fully dissolve.
- Pour the simple syrup into a food processor, and process until the pistachios break down. Run through a cheesecloth or fine mesh strainer to remove particles and pour it into a heat-proof container.
- Let fully cool to room temperature before placing in the refrigerator until ready to use.
