Something about the combination of flavors in a mojito is perfect.  The lime, mint, and white rum are so refreshing and flavor while also making for a perfectly light cocktail that tastes like summer in a glass.  After making a mojito mocktail recipe a few months ago, I really wanted to try making classic mojito.

Now the one difference between my recipe and other mojito recipes is that it calls for mint simple syrup rather than muddling mint and sugar or mint and simple syrup.  While I give instructions for both of those versions in the notes of the recipe, I like the consistency of using mint simple syrup as you don’t end up with any chunks of mint at the bottom of the drink and it’s easier to adjust to taste if you want more or less.  You can make the mint simple syrup ahead of time too! Totally up to you which route you take!

When I serve this recipe, I like to put lots of while mint leaves and pieces of lime in.  It makes the drink visually interesting and beautiful while also lending a little extra flavor.  I suggest leaving the mint leaves whole so that it’s harder to end up with one going up your straw.

The recipe makes one serving but you can always scale it up if you are serving more people.  Enjoy!

Instructions

  1. In a glass filled with ice, add in mint simple syrup, lime juice, and rum. Use club soda to fill up the glass.
  2. Serve with a sprig of mint and a slice of lime.

Notes

* I prefer to use mint simple syrup to add flavor and sweetness to the drink but if you prefer to muddle the mint, muddle 6 mint leaves with 1/2 ounce simple syrup or 2 teaspoons of granulated sugar.
