Cranberry Brie Bites
If you haven’t noticed, I am a huge fan of brie. From my blueberry brie scones to my brie mac and cheese, I always seem to be using it in something! When I was thinking of holiday appetizers, I knew I had to make something with brie and I had a bag of cranberries in the freezer so I thought combining them would be perfect and thus, this cranberry brie bites recipe came into fruition.
Something I love about this recipe is you need just 3 simple ingredients – puff pastry, cranberry sauce, and brie. It’s easy to whip up and the flavors are great for both Thanksgiving and Christmas!

How do you serve brie?
Brie can be served a variety of ways but the most popular is heating it in the oven and then topping it with fruits, nuts, etc. You can also wrap it in a crescent sheet or puff pastry sheet before baking it. You can serve brie with sliced baguette, crackers, fruit, etc.
What is the white stuff on brie cheese?
The white stuff around brie is the rind which is made from a white mold that is sprayed on it (penicillium candidum).
Do you eat the rind of brie cheese?
You can! It’s really a personal preference of whether or not you choose to eat the rind.
How do you remove the rind from brie cheese?
If you choose not to eat the rind, you can easily cut it off by placing the brie in the freezer for about 30 minutes before removing it and cutting off the top, bottom, and sides of the brie.
What’s the difference between camembert and brie?
Both cheeses are very similar but from different regions of France. Additionally, brie has cream added to it so it is a bit creamier.
How to make cranberry brie bites
Step 1 – Cut puff pastry
Cut puff pastry into 24 even squares. I divided it into 4 vertical rows and 6 horizontal.
Step 2 – Cover with egg wash
Place puff pastry pieces on a lined sheet pan and cover each piece with egg wash. An alternative to placing the puff pastry flat on a sheet pan is to put each piece in a muffin pan. This will lead to a different shape but everything will stay in the puff pastry better.
Step 3 – Brie
Place a chunk of brie that is about 1 teaspoon on each piece of puff pastry.
Step 4 – Cranberry sauce
Top the puff pastry with about 1 teaspoon of chunky cranberry sauce. This can be from a can or homemade (I used THIS recipe, it’s my favorite).
Step 5 – Bake
Bake at 400 for 20-25 minutes or until golden brown.

Cranberry Brie Bites

Ingredients
- 1 sheet puff pastry
- 1 cup chunky cranberry sauce
- 1 wheel brie cheese
- Egg wash
Instructions
- Preheat oven to 400 degrees and line a sheet pan with parchment paper or a silicon mat.
- Cut puff pastry into 24 even sized pieces. Place on sheet pan with about an 1.5" between them. Brush with egg wash.
- Place a chunk of about 1 teaspoon of brie on each piece and then top with 1 teaspoon of cranberry sauce.
- Place in oven and bake for 20-25 minutes or until the edges of the pastry are golden brown.
