Chili’s is one of those restaurants that’s been around for so long, it’s an old standard. One that sometimes you forget about until you maybe can’t get into your favorite restaurant. Sound familiar?

Recently we ended up at a Chili’s while traveling and my kids thought it was the best thing ever. Mom and dad weren’t quite as blown away, but we did order an old favorite off the menu, the southwestern egg rolls. And then we remembered how much we used to love ordering them way back when.

And that’s how these tasty Copycat Air Fryer Chili’s Southwestern Egg Rolls came into existence. Why not make them at home, for snacking, a lite meal, or a great game day spread.

What ingredients do you need to make this recipe?

  • Vegetable oil
  • Chicken breast
  • Seasonings: chili powder, cumin, garlic powder, salt and pepper
  • Monterrey Jack cheese
  • Corn
  • Bell pepper
  • Spinach
  • Jalapeno pepper
  • Cilantro
  • Egg roll wrappers

Some tips to make preparation easier:

  • Know you air fryer, some cook hotter and faster.
  • If you like spicier foods, you can keep the seeds in jalapeno. If deseeding, please use caution.
  • Egg roll wrappers are usually found in the refrigerated produce section.
  • I’ve also used ground chicken in place of chicken breasts.

Simple step by step directions:

Heat oil in a skillet over medium heat. Brown chicken.

Once the chicken is browned, add all the vegetables and spices.

Once cooked, remove from the heat and add the cheese. Stir to combine.

Place egg roll wrapper on a flat surface. Using some water, wet the edges of the wrapper. Using a spoon, add a Tablespoon or 2 of filling onto the wrapper in the center.

Fold in the right and left corners of the egg roll wrapper.

Fold in the top corner and roll the wrapper closed. Add water to help seal the wrapper closed.

Place egg rolls in the air fryer basket and spray or brush lightly with oil.

Cook at 320° degrees for 6 minutes, flip and cook for 2 more minutes.

Yield: 6-8 egg rolls

Ingredients

  • 1 Tablespoon vegetable oil
  • 8 ounces chicken breast, diced
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 cup Monterrey Jack cheese, shredded
  • 1/4 cup corn kernels, drained and rinsed
  • 1/2 cup red bell pepper, finely diced
  • 1/2 cup onion, finely diced
  • 1/4 cup frozen spinach, thawed and chopped
  • 1 jalapeno pepper, deseeded and diced
  • 1 Tablespoon fresh cilantro, finely chopped
  • 6-8 egg roll wrappers

Instructions
