Chocolate Truffle Red Velvet Cupcakes

With the sweetest of all holidays just around the corner, I was thinking we needed some delicious cupcakes on the site. Not just any old cupcakes, but cupcakes that contain a hidden treat.

Chocolate Truffle Red Velvet Cupcakes are the perfect holiday treat for Valentine’s Day. Not only are they wonderfully flavored cupcakes, but hidden within the confines of the cupcake portion you’ll find a scrumptious chocolate truffle. A treat within a treat, a sweet for your sweet.

Homemade cupcakes with a decadent inside treasure may sound like a challenging project, but in all honesty, they are quite achievable. They can be decorated as much or as little as you desire. Around here I have so many fun sprinkles it’s hard to land on just one style, so more often than not we will have a huge variety depending on who is decorating.

Ingredients

Cupcakes

  • 1/2 cup unsalted butter, room temperature
  • 1 3/4 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 Tablespoon white vinegar
  • 1/2 teaspoon salt
  • 2 Tablespoons cocoa powder
  • 1 teaspoon baking soda
  • 1/4 cup vegetable oil
  • 1 cup buttermilk
  • 2.5 cups all purpose flour
  • Red food coloring
  • 20 milk chocolate truffles

Frosting

  • 1/2 cup unsalted butter, room temperature
  • 8 ounces cream cheese, room temperature
  • 3 3/4 cups powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a large mixing bowl, add in the ½ cup of butter and granulated sugar.
  3. Using a hand or stand mixer, beat until smooth and creamy.
  4. Add in the eggs and vanilla extract.
  5. Mix and add the white vinegar.
  6. Add in the salt, cocoa powder, and baking soda.
  7. Once mixed, add in the vegetable oil and buttermilk.
  8. Mix until well combined and add in the food coloring.
  9. Add in as much coloring until the desired red is achieved.
  10. Slowly add in the flour in ½ cup increments, mixing in between each time.
  11. Once everything is well mixed, grab a muffin pan lined with cupcake liners.
  12. Add in a Tbsp. of the cake batter.
  13. Place one chocolate truffle in the middle of the batter.
  14. Add in more batter until the liner is ¾ of the way full.
  15. Repeat with the rest of the empty liners.
  16. Bake for 13-16 minutes.
  17. Be sure to check with a toothpick by placing the toothpick in the middle of a cupcake. If the toothpick comes out clean of red, they are done!
  18. Allow cupcakes to cool.
  19. While cooling, start on the frosting by adding the butter and cream cheese into a large mixing bowl. 
  20. Beat until creamy and smooth.
  21. Add in the vanilla extract and mix well.
  22. Slowly add in the powdered sugar ½ cup at a time.
  23. Once all the powdered sugar is mixed in, place your frosting into a piping bag prepared with the piping tip of your choice.
  24. Pipe the frosting onto each cupcake.
  25. Decorate with sprinkles if desired.

Notes

If the frosting is too thick for your liking, add in 1 Tbsp. of heavy cream at a time until desired consistency is achieved.

Add a touch of red food coloring to the frosting to achieve a pale pink if desired.

You can buy Lindor truffles in a larger-sized bag, I've found them at Costco.
