Chili Cheese Dip
The cheesier the dip, the better. That’s my opinion when it comes to dips and this recipe does not disappoint in the cheese department with two of the three ingredients being cream cheese to make it nice and creamy along with cheddar to give it a bit of bite and gooey-ness.
Now this recipe might also be the easiest one I have ever made considering the only other ingredient in the recipe is a can of chili and the total cook time is about 15 minutes. Now you are more than welcome to use homemade chili instead, subbing in about 2 cups of chili. It can be a great way to use up any extra chili you have or to use your favorite can of chili from the grocery store. I like Annie’s Spicy Chili, a meatless version that has so much flavor and doesn’t break the bank.Depending on which type of chili you use, this can be a dip that you can serve to vegetarians! If you are really ambitious, you can make it vegan by substituting in a nut or soy based cream cheese and using a cheddar cheese alternative. While I haven’t personally tried it, it should work!
Now this recipe is very easy to scale up and make it for a bigger crowd by just doubling or tripling the ingredients. You may need to cook it long if you make a larger batch so that the entire dip is warm and that the cheese melts.
One last note – If the chili isn’t spicy enough for you, add a bit more chili powder to it (1/2 teaspoon is probably a good bet) and adjust to taste or just a little hot sauce. Remember, it’s better to low ball it and add more than it is to add to much spice at the beginning.

Ingredients
- 1 can of pre-made chili (15 ounces)
- 4 ounces cream cheese
- 2 cups cheddar cheese (shredded)
Instructions
- Preheat oven to 375 degrees,
- In a medium mixing bowl, combine cream cheese, 1 cup of cheddar cheese, and can of chili. Mix with a spoon until well combined.
- Transfer to a medium cast-iron skillet or a glass pie dish and then top with remaining cheddar cheese. Place pan in oven and cook for about 15 minutes. Serve immediately.
