This may sound crazy but I had never had butterscotch until recently. Like, nothing butterscotch flavored at all. I thought it was just that funky looking yellow candy and that was it so when I learned that it was a sweet, caramel like sauce made with rich dark brown sugar, my mind was blown. I set out to try it and it completely knocked my socks off! Having made salted caramel sauce before, I found this to be even easier to make and it is so good on everything from vanilla bean ice cream to blondies to brownies! I might have made the best butterscotch latte this week that should be coming soon too!

- 4 tablespoons butter
- 3/4 cup dark brown sugar
- 1 teaspoon salt
- 1/2 cup heavy whipping cream
- 1/2 teaspoon vanilla extract
- In a small saucepan over medium heat, melt butter. Add in all ingredients except for vanilla extract and cook until the sugar has fully dissolved.
- Remove from heat and add in vanilla extract. Let cool to room temperature before storing in the refrigerator.
* You can use light brown sugar instead of dark brown sugar but it won't have quite as deep of a flavor.
