Boozy Dulce de Leche No-Bake Cheesecake

This is a dessert that is really simple to prepare but delivers big flavors. As much as I adore a traditional cheesecake, there’s something to be said for an easy to make no-bake cheesecake. I tend to make them more during the hotter months when I avoid heating up my kitchen.

The basis of this delicious dessert has lovely rich flavors from Dulce de Leche and a touch of boozy from the addition of Baileys Irish Cream. You won’t believe how wonderful the flavors combine, a caramel Baileys taste sensation! Of course, if you prefer to omit the Baileys the result will still be fantastic and alcohol-free.

So, I’ll just admit right now I used canned Dulce de Leche…yup, right off the shelf from the store. I’ve made it from scratch and it is very simple but when I can just grab a can and have it in the pantry, that’s a no-brainer in my opinion. Now let’s address the crust…Oreo cookies! Dulce de Leche is made from sweetened condensed milk is heated until it turns into a thick consistency with a deep caramel color.

How do I make homemade Dulce de Leche?

I prefer the microwave method vs. the popular stovetop method. This is my preference. Pour one can 14 oz can Sweetened Condensed Milk in a large microwave-safe bowl. Microwave 2 minutes at 50% power, stir. Repeat. Microwave 8-12 minutes on 30% power, stirring every 2-3 minutes until light caramel color. ***Times & temp will vary!***

Ingredients

• 24 Oreo cookies, crushed
• 1/3 cup butter, melted

Filling

• 8 oz cream cheese, softened
• 13 oz Dulce de Leche
• 1/3 cup Baileys Irish Cream
• 8 oz heavy whipping cream

Instructions

1. Combine crushed Oreo cookies and butter, pat into bottom of pie pan. Chill until filling is completed.
2. In mixing bowl with an electric mixer beat cream cheese until fluffy. Add in Dulce de Leche and Baileys, mix until smooth and combined.
3. In a separate bowl beat heavy whipping cream with electric mixer until peaks have formed, approximately 2-3 minutes. 
4. Fold whipped cream into cream cheese mixture until combined. Pour into prepared crust. Refrigerate a minimum of 4 hours prior to serving. 

Notes

Cheesecake may be frozen, thaw in refrigerator approximately 2 hours prior to serving.
