Amaretto Peach No Bake Cheesecake
In Michigan, we have an amazing peach season. There’s nothing like a juicy, ripe, fresh peach that’s recently been picked. And as much as they are amazing, my timing is never right. So from time to time when I make peach dishes I grab a can of peaches or use frozen. Timing is everything, right?
This delicious Amaretto Peach No Bake Cheesecake was a creation that hit me out of the blue one day. I adore Amaretto and the way it blends so nicely with many varieties of fruit and fruity drinks. Last holiday season I even made my own “cheater version” of Amaretto (it was super easy). I may just have to bring that recipe onto Snacks and Sips later this year.
Wouldn’t you agree that no bake desserts are such a huge gift during the summer months? We just had a weekend of 100+ degrees with the heat index, it was hazy, hot, humid and just plain ICK. In that kind of heat, there’s absolutely no way you’ll find me cranking up the oven and heating up my kitchen, even for dessert! It is simply not going to happen. But whipping up a no bake dessert? Yes, that will definitely happen.
This is a wonderful dessert to prepare ahead of time and freeze, especially if you are entertaining. Pull it out of the freezer into the refrigerator a couple of hours before serving. Now if you’d like to make a non-boozy version, I’ve got ya covered, no worries. Simply omit the Amaretto and add in the juice from the peaches to make a family-friendly version.

Amaretto is a sweet, almond-flavored liqueur originating in Italy.
What is Amaretto made from?
Originally Amaretto was made from bitter almonds. Commercially manufactured Amaretto is now made from ground apricot pits, almonds or both, with added spices.

Amaretto Peach No Bake Cheesecake

You'll love the flavors that blend together in this lovely Amaretto Peach No Bake Cheesecake! This easy to make dessert will wow your guests!
Ingredients
- 8 ounce Cream Cheese, softened
- 3 ounce Peach flavored Jello
- 8 ounce Peaches, drained & chopped
- 1/3 cup Amaretto
- 8 ounce Cool Whip, thawed
- 1 graham cracker crust
Instructions
- In mixing bowl using electric mixer beat cream cheese until fluffy. Pour in packet of Jello and continue mixing.
- Add Amaretto and diced peaches, mix until combined.
- Stir in Cool Whip until mixed thoroughly.
- Spoon into crust and cover.
- Refrigerate a minimum of 4 hours prior to serving.
Notes
Simply omit Amaretto and substitute the canned peach juice if you prefer a pie with no alcohol. If your crust is shallow, you may have enough filling for two smaller pies. Pie may be frozen, thaw in the refrigerator approximately 2 hours prior to serving.

Very easy recipe to follow. The pie came out very fluffy. I purposely didn’t mix for a long time, just enough to combine all the ingredients and even out the color, longer would of made it more dense. I did find the taste to be too sweet for my liking. I may try to hold back on the sugar by finding low sugar or low cal jello.
