Almond Simple Syrup
A little over a year ago, I was at a macaron shop in Ann Arbor with some friends and I saw that their drink of the day was an almond latte. I figured I would give it a shot, figuring it was just a latte made with almond milk but I was pleasantly surprised to realize that it was actually a regular latte with almond simple syrup in it. It had such a nice, nutty flavor that gave it the perfect level of sweetness. Fast forward to today when I was thinking back to that drink and I decided to just figure out how to make it at home.
Now like all of my other simple syrup recipes, it has three main ingredients – water, sugar, and flavoring. Now I decided to go the simple route here and use almond extract but you could use real almonds in it like I did in my pistachio simple syrup recipe. I was going for simplicity and consistency by just using the the extract.
I am so excited to get to experiment and try this simple syrup in more recipes but I can definitively say that it was great in an almond latte and it was extactly the perfect flavor that I remembered. I had my latte with an earl grey macaron that I made and I felt like I was right back in that macaron shop.

- 1 cup granulated sugar
- 1 cup water
- 1 teaspoon almond extract
- In a small saucepan over medium heat, combine all ingredients. Bring to a soft boil and cook until the sugar has dissolved, stirring the entire time.
- Transfer to a heat-proof container to cool to room temperature. Store in a refrigerator until ready to use.
* If you want a thicker syrup, use 1/2 cup water.
